Ingredients
  

  • 1 8 oz Round Brie cheese Keep rind on
  • 2 tbsp Pecans chopped
  • 1 tbsp Sugar-free maple syrup Use a keto-friendly variety
  • 1 tsp Fresh thyme leaves
  • 1/4 tsp Garlic powder
  • 1/4 tsp Black pepper Freshly ground
  • 1 pinch Flaky sea salt
  • 1 spring Fresh rosemary Optional, for garnish

Method
 

  1. Preheat the oven to 350°F (175°C). Line a small baking dish or oven-safe skillet with parchment paper.
  2. Place the Brie wheel in the prepared baking dish. Keep the rind on to help the cheese hold its shape while baking.
  3. Sprinkle the chopped pecans, fresh thyme, garlic powder, black pepper, and flaky sea salt evenly over the top of the Brie.
  4. Drizzle the sugar-free maple syrup over the Brie and toppings, spreading it gently so it coats the surface.
  5. Bake for 10–12 minutes, or until the Brie is soft and creamy in the center. Avoid overbaking.
  6. Remove the Brie from the oven and let it rest for 1–2 minutes. Garnish with fresh rosemary if desired.
  7. Serve immediately while the Brie is warm and creamy with keto crackers, cucumber slices, celery sticks, bell pepper strips, or other low-carb vegetables.

Notes

Bring the Brie to room temperature for 15–20 minutes before baking so it melts more evenly. Keep the rind on while baking to help the cheese maintain its shape. Avoid overbaking—the center should be soft and creamy rather than completely liquid. For extra flavor, lightly toast the pecans before adding them. Serve immediately with low-carb crackers or fresh vegetables.
