  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract

  • 1/2 cup natural peanut butter
  • 2 tbsp heavy cream
  • 1 cup almond flour
  • 1/2 cup sugar-free chocolate chips
  • 1 tsp vanilla extract

Method
 

  1. Combine the almond flour, melted butter, powdered erythritol, vanilla extract, and salt until the mixture resembles wet sand.
  2. Firmly press the mixture into a 9-inch pie dish to create the crust.
  3. Refrigerate the crust while preparing the filling.
  4. Beat the softened cream cheese until smooth and creamy.
  5. Add the peanut butter, heavy cream, melted butter, vanilla extract, powdered erythritol, and salt. Mix until fully combined.
  6. Gradually stir in the almond flour until a thick cookie dough forms.
  7. Fold in the sugar-free chocolate chips.
  8. Spread the filling evenly over the chilled crust.
  9. Smooth the top using a spatula.
  10. Refrigerate for at least 2 hours, or until firm.
  11. Before serving, garnish with sugar-free whipped cream, extra chocolate chips, chopped pecans, or a drizzle of sugar-free chocolate.
