Ingredients
  

  • 1 8 oz Round Brie cheese
  • 1/3 cup Walnuts chopped
  • 3 tbsp honey
  • 1 tbsp Unsalted butter melted
  • 1/2 tsp Fresh thyme leaves optional
  • 1/4 tsp Ground cinnamon optional
  • 1 pinch Flaky sea salt
  • 2 springs Fresh rosemary or thyme Optional, for garnish

Method
 

  1. Preheat the oven to 350°F (175°C). Line a small baking dish or baking sheet with parchment paper.
  2. Place the Brie wheel in the center of the prepared baking dish. Leave the rind on, as it helps hold the cheese together while baking.
  3. Toast the chopped walnuts in a dry skillet over medium heat for 3–4 minutes until fragrant, stirring frequently.
  4. In a small bowl, combine the toasted walnuts, honey, melted butter, fresh thyme, and cinnamon if using.
  5. Bake the Brie for 12–15 minutes, or until the cheese is soft and slightly gooey in the center.
  6. Carefully remove the Brie from the oven and spoon the warm honey walnut mixture evenly over the top.
  7. Sprinkle with a pinch of flaky sea salt and garnish with fresh rosemary or thyme sprigs.
  8. Serve immediately with crackers, sliced baguette, apple slices, pear slices, or grapes while the cheese is warm and creamy.

• Leave the Brie rind on while baking to help the cheese keep its shape.
• Toasting the walnuts enhances their flavor and adds extra crunch.
• Warm the honey slightly before mixing if it's thick.
• Don't overbake the Brie, or it may burst open and lose its creamy center.
