  • 12 oz cremini mushrooms sliced
  • 12 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme leaves
  • 1 cup heavy cream
  • 8 oz brie cheese rind removed and cubed
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of pasta water before draining.

  3. Add the sliced mushrooms and cook for 6–8 minutes until golden brown and tender.
  4. Stir in the minced garlic, thyme, salt, and black pepper, then cook for another minute.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Add the cubed brie cheese and stir until completely melted and smooth.
  7. Mix in the grated Parmesan cheese until the sauce becomes creamy.
  8. Add the cooked pasta and toss until evenly coated. Stir in reserved pasta water if needed to loosen the sauce.
  9. Sprinkle with chopped parsley and serve immediately with extra Parmesan if desired.
