- Preheat the oven to 400°F (200°C). Lightly grease a 24-cup mini muffin pan.
- Roll out the thawed puff pastry and cut it into 24 equal squares.
- Press each pastry square into a mini muffin cup.
- Place one cube of brie into each pastry cup.
- Add about 1 teaspoon of cranberry sauce on top of the cheese.
- Sprinkle with chopped rosemary or pecans if desired.
- Whisk together the egg and water, then brush the exposed pastry edges with the egg wash.
- Bake for 15–18 minutes, or until the puff pastry is golden brown and crisp.
- Let the bites cool for 5 minutes before removing them from the pan.
- Serve warm and enjoy!

• Keep the puff pastry cold until you're ready to use it for the flakiest results.
• Freeze the brie for 10–15 minutes before cutting to make it easier to cube.
