- Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
- Cut the cabbage into bite-sized pieces, removing the tough core. Place the chopped cabbage in a large bowl.
- Drizzle the cabbage with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss well to coat.
- Spread the seasoned cabbage evenly in the prepared baking dish.
- Bake for 20 minutes, stirring halfway through, until the cabbage begins to soften and lightly brown.
- While the cabbage bakes, combine the heavy cream, softened cream cheese, minced garlic, and black pepper in a bowl. Mix until smooth.
- Remove the cabbage from the oven and pour the creamy mixture evenly over the top. Gently toss to coat.
- Sprinkle the cheddar, mozzarella, and Parmesan cheeses evenly over the cabbage.
- Return the dish to the oven and bake for 12–15 minutes, until the cheese is melted, bubbly, and golden around the edges.
- Let the cheesy baked cabbage cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For the best texture, don't overcrowd the baking dish. The cabbage should have enough room to roast and caramelize. For extra flavor, add a pinch of red pepper flakes or a little cooked bacon before baking. Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven or microwave.
