Ingredients

  • 1 8 oz Round Brie cheese
  • 1/3 cup Raspberry jam
  • 1/4 cup Pecans or walnuts Chopped and lightly toasted
  • 2 tbsp honey Optional, for drizzling
  • 1 tsp Fresh thyme leaves optional
  • 1 tbsp Fresh rosemary Finely chopped, optional
  • 1 pinch Flaky sea salt

Equipment

  • Small baking dish
  • Parchment paper
  • Small skillet
  • Measuring cups and spoons
  • Wooden spoon
  • Serving platter
  • Knife

Method

  1. Preheat the oven to 350°F (175°C). Line a small baking dish with parchment paper.
  2. Place the Brie wheel in the center of the prepared baking dish, leaving the rind on to help it keep its shape during baking.
  3. Spread the raspberry jam evenly over the top of the Brie and sprinkle with the chopped toasted pecans or walnuts.
  4. Bake for 12–15 minutes, or until the Brie is soft and creamy but still holds its shape.
  5. Remove from the oven and drizzle with honey if desired. Sprinkle with fresh thyme, chopped rosemary, and a pinch of flaky sea salt.
  6. Allow the Brie to rest for 2 minutes so the cheese settles slightly before serving.
  7. Transfer to a serving platter and surround with crackers, toasted baguette slices, apple slices, pear slices, grapes, or pretzels.
  8. Serve immediately while the Brie is warm, creamy, and perfectly melted.

Notes

• Bring the Brie to room temperature for about 20 minutes before baking for even melting.
• Leave the rind on—it becomes soft and helps hold the cheese together.
• Toast the nuts before adding them for extra crunch and flavor.
• Avoid overbaking, as the Brie may burst and lose its shape.
• Serve immediately with crackers, crusty bread, fresh fruit, or as part of a charcuterie board for the best texture and flavor.
